This will result in a crispier, non mushy end result. I'm not sure why we're all giving you tips though as you've made it clear that you've "finally perfected homemade hash browns."Reverend Joyleafhttps://www.blogger.com/profile/16294291731182044362noreply@blogger.comtag:blogger.com,1999:blog-15457513.post-78891210201642331342009-04-20T15:11:00.000-06:002009-04-20T15:11:00.000-06:00Cook the potatoes till they are just barely cooked...Cook the potatoes till they are just barely cooked, then cool which I forgot to mention. This way they will still be firm enough to grate and obviously not burning hot.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-15457513.post-87308313941941748132009-04-20T07:52:00.000-06:002009-04-20T07:52:00.000-06:00Kristen my magic bullet is long gone and dead. :(...Kristen my magic bullet is long gone and dead. :(<br /><br />I must have been thinking of you kirst when I wrote that... hehe. I definitely want to have some kind of dinner but I may have a stampede meeting next week. I'll double check. I have to work AT 5:20 AM this Tuesday so this week is out. I'm pretty sure this is the busiest week ever.<br /><br />And I NEVER knew you are only supposed to flip hashbrowns once. I don't have a cast iron pan. I've been thinking maybe I should get one. Isn't it hard to grate them once they're cooked a bit? Aren't they hot and mushy?Heatherhttps://www.blogger.com/profile/15468909426842343734noreply@blogger.comtag:blogger.com,1999:blog-15457513.post-62781472507565820442009-04-19T14:09:00.000-06:002009-04-19T14:09:00.000-06:00There are two schools of thought on making shredde...There are two schools of thought on making shredded hashbrowns. 1. Grate the potatoes raw and cook from raw. 2. Cook the potatoes and then grate and cook. I prefer to steam the potatoes first, or boil if I'm not in a professional kitchen with a good steamer since steamer baskets that fit in pots just don't work the same. Then I peel and grate the potatoes, and cook. Cooking should be done in a well seasoned pan such as cast iron or carbon steel. I would not suggest a non-stick pan because sometimes you get the good crispy bits that stick to the pan that need to be scraped off and I don't want teflon in my potatoes. I like to use lots of butter but it's not necessary, just tasty. A small amount of oil is all that you need. Just like pancakes the hashbrowns should only be flipped once.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-15457513.post-61436626895286064772009-04-19T13:56:00.000-06:002009-04-19T13:56:00.000-06:00I'm glad your looking forward to seeing Kristen ev...I'm glad your looking forward to seeing Kristen even if you missed spelled her name.
